I just created a SmartOS zone that includes gitlab.
It's running as - almost - plug and play:
- install the dataset
- create a vm
- login on http:///

Of course, there's lots you can and probably should configure:
- postfix
- mysql server (currently there's a mysql server contained)
- probably the features you want in gitlab

I'll upload the dataset over the weekend, it's 633MB.
